With some of my beans, I end up with odds and ends that don’t quite make up enough to fill a drum for roasting. I put them aside and once I have enough of those origin odds and ends with a similar roast profile, I’m able to roast them together and make a blend.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eIn a moment of madness, I decided to throw everything into the one melanger—the nutty ones, the fruity ones, the cocoa forward ones, the peaty ones, the woody ones. And what came out totally blew my mind. Not one, or two, or three origins but (count them!!) SIX different origins into one 58% milk chocolate. ‘Mateza’ from Madagascar, ‘Mountains of the Moon’ from Uganda, ‘San Maceo’ from Colombia, ‘Tabaquite Village’ from Trinidad, ‘Piura Blanc’ from Peru and ‘Savai’i from Samoa.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eI kid you not, the amalgamation of all of these things tastes unsurprisingly complex but also somehow simple, like eating melon with condensed milk, toffee and cocoa.
