Trinidad 'Tabaquite Village', 55% Milk Drinking Chocolate

These 55% milk drinking chocolate flakes are made with cacao beans from Trinidad. These cacao beans are harvested by small farmers in the area of Tabaquite Village. The beans are centrally fermented, dried and bagged at the Tabaquite Fermentary. The operation is owned and operated by Mr. Harryman Chattergoon and his family since 2002.

This is a rich drinking chocolate, very cocoa forward without a lot of sweetness—closer in flavour profile to a dark milk chocolate. As a guide, add 30g of chocolate flakes to 150ml of your choice of milk or hot water, though adjust to your preference. You can add your own sugar or sweetener to taste! Enjoy!
